Number of Servings: 8

Ingredients

    Chicken cutlets or breasts cut thin ( 8 - 3oz serving raw)
    Pop chips
    Fresh broccoli
    Onion
    Low fat shredded cheddar cheese
    WW or laughing cow spreadable wedges
    Buttermilk
    Cooking spray
    Salt & pepper to taste

Directions

Heat oven to 400 degrees
Arrange 8 cutlets flat on foil or wax paper

Prepare your bowl with buttermilk and another with the crushed popchips

Spray a baking dish with cooking spray

In a small bowl mix the shredded and spreadable cheese , onion,broccoli and salt and pepper to taste all together divide and spread mixture onto the 8 cutlets loosely roll cutlets up

Take each cutlet dip in buttermilk then dredge in popchips and place in baking dish seam side down then lightly spray the top of each cutlet with cooking spray and bake for 25-30 min
