Ingredients

(coconut oil and or sesame oil for frying, optional)
1 egg
1 teaspoon soy sauce
(a little chicken broth for frying, optional)
2 oz. chicken, cut in strips
1 tablespoon chopped onion
1 tablespoon chopped celery
More soy sauce to taste
1 cup of prepared (cooked) cauliflower rice (find recipe at:
http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2149036 )
Tips
Cauliflower rice is not included in the nutrition facts because you can't count a recipe as an ingredient. Count it separately.
Directions
Spray a non-stick pan with Pam or other non-stick spray. (Or use oil if your plan allows it.)
Mix together the egg and soy sauce with a fork. Pour into a hot pan and cook like a pancake. Then dump out on a plate an cut into short strips. Set aside
Spray the pan again (or use some broth or more oil) and add the chicken, celery, and onion. When the chicken is cooked, add the cooked cauliflower rice and cooked egg. Stir with spatula until heated through. Serve.
