Ingredients

2 potatoes, peeled and cubed
1 carrot, diced
1/2 cup green beans, chopped
1/2 cup frozen pea
1 cup canned garbanzo beans, drained and rinsed
1 onion, finely chopped
2-3 tomatoes, peeled and chopped
1 tsp salt
1 tbls vegetable oil
1/2 tsp ground turmeric
1 tsp mustard seed
1 tsp ground cumin
1 tsp garam masala
1/2 tsp ground ginger
1/2 tsp garlic powder
1 tsp chili powder
Directions
1-In a microwave safe dish, place the potatoes, carrots, green beans, salt and turmeric. Cook for 5 minutes. Add the peas and cook for an additional 3 minutes.
2- Heat oil in a large skillet over medium to medium low heat. Heat mustard seeds and cumin. When seeds start to pop, add the onion and saute until transparent. Stir in tomatoes, garam masala, ginger, garlic, and chili powder. Saute 3 minutes.
3- Add cooked vegetables to the tomato mixture and saute for 1 minute.
*Note: Water or vegetable broth can be added at the end of the cooking process to make this dish more like a sauce that can be served over rice.
