Number of Servings: 10

Ingredients

    1 and 1/2 teaspoons of Ground Cinnomon
    1 pinch of Malton Salt
    2 tablespoons of Honey
    2 small pieces of Crystallized Ginger
    1 small Apple
    2/3 cup of Soya Milk
    1/2 cup of cooked Porridge
    1 Egg
    1 cup of Wholemeal Flour
    1 tablespoon of Milled Flax, sunflower, Pumpkin, Sesame Seed and Goji Berries
    1 and 1/2 teaspoons Baking Powder
    1/4 cup of Raisins
    1/4 cup of Dried Cranberries



Tips

Add copped nuts to make a more filling muffin Or flaked almonds on top of muffins


Directions

Pre-heat oven to 180 degrees
1) Core and dice Apple add to a sauce pan with a little
water then cover and simmer until a thick pulp
2) Gently whisk the Egg then add the soy milk, 3 tablespoons of apple sauce made above and honey, beat gently until combined
3) Add porridge, raisins and cranberries, finely chop the ginger then add to mixture
4) Sift all dry ingredients into the batter
5) Distribute batter evenly into 10 greesed muffin cases or muffin tin
6) Bake for 15-20 mins
