Ingredients

3/4 cup cooked red quinoa
1.5 cup cooked bulgar wheat
1 can black beans, rinsed
1 cup spinach
3 tbsp chopped fresh cilantro
2 tbsp mayo
2 tbsp Epicure Hummus spice (or Epicure Pueblo Bean Dip)
*I often play around with the spices, adding Chili Powder, smoked paprika, cumin, garlic etc*
Tips
The patties are pretty delicate so handle with care. Haven't really had the time to master my creation and find a way to keep the patties together.
Directions
Cook Bulgar and Quinoa as per package directions. Combine and allow to cool prior to assembling patties.
Place half the beans in the food processor, add spinach, cilantro and spices. Blend until smooth.
In another bowl, mix cooled grains, egg white, along with the remaining black beans with blended bean mixture. Form patties, and pan fry
