Introduction

This recipe does contain lots of sugar but per 1 tbsp. serving the calories are lower than many spreads and is so potent that a little goes a long way. Use on bread products, roasted meats, to add flavor to soups and baked goods. Really limitless potential. Goes particularly well in apple or peach recipes. Ingredients

    2 lbs fresh ginger root, peeled and grated
    4.5 cups white sugar
    2 cups honey
    juice of half a lemon (optional)
    1 box powdered pectin

Directions

Combine ginger root, honey, sugar and lemon juice in a heavy bottomed pan. Bring to a boil, stirring constantly to prevent scorching. Boil 10 minutes. Mix pectin with just enough water to dissolve and add to boiling ginger mixture. Boil an additional two minutes, stirring constantly. Then, remove from heat and allow to cool for about 5 minutes. Ladel into sterilized jars. Jam will be very runny at this stage. Don't worry, it sets up in about 24-48 hours and is the consistency of most jams. Process in a water bath for 10 minutes.
