1 large whole egg
3 large egg whites
1 cup fresh spinach, lightly packed baby leaves
2 Tbl feta cheese, crumbled
1/4 tsp black pepper
1 tsp olive oil or canola oil
Tips
You can use low-fat feta to reduce the calories further.
You can also add 4 or 5 cherry or grape tomatoes at the same time as the spinach and feta. Some people like to add onion or garlic, but I think it's unnecessary and adds to the prep time.
Directions
Beat the egg and egg whites in a medium bowl until frothy. Stir in the spinach, feta and pepper.
Heat the oil in a medium nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring, until the eggs are set and the cheese is slightly melted, about 3 minutes.
