Ingredients

    1 1/4 # skinless, boneless chicken breast, cut into bite-size pieces
    1/2c chopped onion
    1t garam masala
    1 1/2c bulgur
    1/2 med. lemon, seeded, & thinly sliced
    3/4c dried apricots, quartered
    1/3c golden raisins
    1/2t gr. ginger
    1/2t gr. cinnamon
    1/2t gr. allspice
    pinch of cayenne pepper
    1-14 1/2oz can swansons chicken broth
    1 1/4c water
    1/3c slivered almonds,toasted*

Tips

*to toast almonds: spread nuts in a shallow baking pan. Bake at 350 for 5-10min. Watch carefully & stir twice.
I often use a large can of Chicken breast instead of fresh: about the same as fresh.


Directions

1. In a lg skillet, sauté chicken, onion & garam masala; cooking & stirring until brown & onion is tender.
2. In a slow cooker combine chicken mixture, bulgur, fruit, & spices. Pour broth & water over all.
3. Cover & cook on low for 2 hours. Stir in almonds.
