Ingredients

    1 med uncooked Yukon Gold potato, diced
    2 C broccoli florets
    1 med shallot, minced
    2 C FF chicken broth
    1/4 t dried thyme
    1 lb cooked shrimp, peeled (med size)
    1/2 FF sour cream
    1/2 C FF skim milk
    1/4 t salt
    1/4 t pepper

Directions

Combine potato, broccoli, shallot, broth and thyme together in a medium size pot. Bring to a boil, partially cover and cook until begetables are tender, about 15 minutes. Pour soup into blemder and puree, return soup to pot.
Add remaining ingredients to pot, simmer until hot, about 3 minutes. Don't boil.
