    Phyllo Dough (16 oz pkg), feta cheese (16 oz), egg (1), Extra Virgin Olive oil (3/4 cup), fresh spinach (24 oz), and large onion (1)


I use an 11" x 15" pan. Use a very sharp knife to cut the pie before baking.


squeeze excess juice from spinach and add sauted onion, and mix with egg, feta, add salt and pepper to taste. A little dill is optional. Work with phyllo follow directions lightly brushing every other sheet with EVO oil. After 12 sheets add spinach mixture, and then layer remaining phyllo on top continuing to brush every other layer with EVO oil. Brush the top completely with the oil. Cut into 24 pieces and bake at 350 degrees for 50 minutes.
