Ingredients

    1/3 cup chopped onion
    1 clove garlic
    1 cup chopped zucchini
    1/4 cup chopped green peppers
    cooking spray
    1/4 cup Mexican cheddar cheese blend
    salt, pepper, chili flakes to taste
    1 tbsp milk
    1 large egg

Directions

Preheat the oven to 400*F.
Spray a skillet with cooking spray.
Saute' the garlic, onion, pepper and zucchini in the skillet until tender.
In a separate bowl, beat the egg, salt, black pepper, red chili flakes and milk.
Add the sauteed vegetables and mix well.
Transfer to 10 oz baking dish.
Sprinkle with the cheese.
Bake at 400 degrees for 15-20 minutes or till the top is golden brown.

    I saute all of the veggies in a pan, crack the eggs in it and call it a scramble. No hot oven! - 6/16/13

    Very Good
    I changed it to make it lower in cholesterol and fat by using 2% milk mexican cheese blend, and also egg beaters; I made enough for 4 people, and it was great! It made an excellent breakfast meal. - 4/22/07

    I made enough for 12 servings and changed in part by adding olive oil as well as red and orange bell peppers. It was very tasty. I do have to say it wasn't very filling for me for a dinner meal. - 4/18/07
