Introduction

This is my take on a very unhealthy dish called armadillo eggs served at a local restaurant. There's looks like an egg, and it's deep fried. Ingredients

    1 package turkey bacon, divided
    3 boneless, skinless chicken breasts, halved length-wise, thawed
    1 can green chiles, to taste
    3 oz. white cheddar cheese

Directions

While you prep the chicken, partially cook the bacon in the oven at 350 for about twenty minutes, or until it's almost done but still pliable, so you can wrap it around the chicken. Season the chicken with house seasoning. Cut the chicken along the side to create a pocket. Place the green chiles and the cheese into the chicken. Wrap each piece of chicken with two pieces of bacon. Secure with a toothpick. Place on a sheet pan with a rack placed in it to keep the chicken from sopping up the oil as it cooks. Bake for about 20 minutes, or until the chicken reaches an internal temperature of 160 degrees F, and the bacon is crisp and browned to your taste, turning the chicken over at least once. Makes 8 Servings.
