Ingredients

    4 Cups Chicken Broth
    8 Cups Water
    1 lb Chicken Breast
    3 Medium Stalks of Celery
    10 Baby Carrots
    2 Medium Yellow Onions
    6 Cups Wide Egg Noodles
    1 Tbsp Extrta Virgin Olive Oil

Directions

Cut up chicken breast into bite size pieces. Brown in fry pan with 1 Tbsp olive oil.
Cut into small pieces celery, carrots and onion.
Place chicken, celery, carrots, onions into stock pot. Add chicken broth, water bring to a boil.
Add egg noodles. Cover and simmer until done.
Salt and pepper to taste.
Makes 14 1-cup servings

    Very good chicken noodle soup. I added a cup of chopped spinach to my bowl before putting in the soup to get some extra veggies. It wilted perfectly and was delightful! - 9/16/11
