Introduction
This simple, delicious soup is one I dry can each year from freeze dried foods. It's perfect for emergencies, camping or anytime you want a meal healthy 'just-add-water' meal. Freeze dried foods can last for 10+ more years on the shelf. I get the Minnesota Grown Wild Rice Vegetable Soup mix from North Bay Trading Co. (http://www.northbaytrading.com/minnesota-grown-wild-rice-soup) I follow sales to pick up the other freeze dried ingredients from them, Honeyville Grain or Emergency Essentials. I have found their products to be high quality, and they offer a selection of organic foods.
Of course, you can also make this with fresh ingredients, or a mix of the two (i.e., use home cooked chicken stock instead of stock power) This simple, delicious soup is one I dry can each year from freeze dried foods. Ingredients
-
1/2 c. cooked cubed chicken breast
1/2 c. Minnesota Grown Wild Rice Vegetable Soup
1/2 c. Button Mushrooms
1/4 c. spinach
1 Bay leaf
1/2 tsp. Garlic powder
1/2 tsp. Dried Basil
1/4 tsp. fresh ground Black Pepper
1/4 tsp. Iodized Sea Salt
3 tsp. Chicken stock powder - reduced salt
4 cups of water
Tips
When dry canning, I leave the dried basil in the corner of a zip-top baggie tied with a twist tie for adding last. The long simmering time can turn the herbs a bit dark.
Directions
Add all ingredients except for basil pouch into a medium size pot.
Add 4 cups of water
Bring to a boil
Cover, Simmer for 45-60 minutes.
Enjoy!
