Ingredients

    2 Orowheat Whole Wheat Sandwich Thins, split
    4 eggs, poached hard or fried with cooking spray
    4 oz Part Skim Milk Mozzeralla Cheese
    1 ripe tomato, diced
    2T pesto sauce prepared (MUFA)
    4 turkey Sausage links

Tips

You can substitute English Muffins for the Sandwich thins but it may increase the calories slightly or effect the fiber content. Also, using Enriched Whole wheat English Muffins may raise the fiber content but it would not be "Flat Belly Friendly." The fat content predominantly comes from olive oil and pine nuts in the pesto which are healthy fats.


Directions

Place split Sandwich thins on a baking sheet. In a small bowl, Combine tomatoes and pesto. Divide pesto and tomato mix into 4 equal serving and spread one serving onto each of the four muffins. Heat the sausage and chop. Top each muffin with 1/4 of the sausage. Poach or fry the eggs until desired cooked through. Put one egg atop each muffin. Top each egg with 1oz Mozzarella cheese. Broil until cheese is melted. Serve.
