These are a great alternative to baked beans, cooking up in 45 minutes using dried brown lentils. I serve them with a crunchy sweet sour coleslaw, on Naan bread. Ingredients

Olive Oil, 1 tbsp
Brown Lentils, 2 cup
Onions, raw, 1 large
Brown Sugar, .5 cup, packed
Molasses, .25 cup
Vegetable Broth, 4 cups
Chili powder, 2 tbsp
Cider Vinegar, .5 cup
Tomato Paste, 0.25 cup
*Ketchup, 3 tbsp
Water,2 cup
Cumin powder, 1 tbsp
Directions
Saute chopped onion in olive oil over medium heat.
Add lentils, vegetable broth, cumin, paprika, and chili powder.
Bring to a boil, then lower to a simmer and cook for 20-30 minutes, until tender (add additional water or broth as needed to maintain a stew like consistency).
Add remaining ingredients, tasting and adjusting as necessary.
Cook for an additional 10 minutes to allow flavors to marry.
Serve warm with flat bread and coleslaw!
