Ingredients

1 sweet potato
2 bell pepper (red or yellow_
1 head of cauliflower
1 jalapeno pepper
1 package f mushrooms sliced
1 can garbanzo beans (chick peas)
1 can of black beans
1 can of diced tomatoes (Recommend Alymer Accents, Chili)
1 Tbls virgin olive oil or coconut oil
1 tsp onion powder
1 tsp garlic powder
1 tsp or to flavor chili pepper flakes
1 tsp chili powder
1 tsp cumin powder
Tips
recommend putting the cauliflower in last and sweet potato first. So that they are still firm and not mushy. I put it in the fridge and take a serving at a time when hungry, and add 1/4 cup of greek yogurt 0 fat, 18 grams of protein to garnish.
Directions
Dice sweet potato,peppers, break cauliflower up
Bring can of tomatoes (Alymer chili Accents preferred), chick peas, black beans to a boil. Add seasoning to flavour, (chili pepper, onion powder, garlic powder, chili powder, cumin recommend tsp each) Lower temperature to medium, add rest of ingredients and cook for 20 minutes on medium, until sweet potato is at desired consistency. I like mine crunchy.
