Ingredients

    3 cups/handfuls Baby carrots
    1 cup/large handful Arugula
    1 Ciabatta bun
    3 TBS Italian dressing
    1/3 cup/a splash Tomato/marinara sauce


Tips

Arugala can be swapped out with spinach.

Whole tomatoes can be used instead of sauce.


Directions

Dice/blend/mix raw carrots and green until chopped finely. DO NOT BLEND INTO PASTE.

Toast the ciabatta bread(or regular whole wheat) with a little olive oil(small amounts of healthy fat help with nutrient absorption).

Drizzle Italian dressing on salad(+1 for nutrient absorption).
