    Chicken Breast, 3 lbs., Boiled and chopped or shredded
    Pickle Relish, 1 Cup
    Spin Blend Light Whipped Dressing (whole container)
    Onion, 1 whole, diced


I love this salad because it's homemade, keeps for several weeks if stored properly with an air-tight lid, and is ready to eat for a meal or a snack. I can put a tablespoon on a cracker if I'm really hungry and just need something healthy to hold me over until my next meal. I like that it's super easy to take to the office for lunch. I grab a couple of pieces of high fiber bread, put some salad in a container, add some fruit, and I've got a great, healthy, filling lunch. And if you have the Spin Blend brand available in your local supermarket, it's half the price of Miracle Whip Light.


Boil chicken breasts for 1 hour (boiling gives the chicken more moisture). Remove chicken from broth and allow them to cool. Chop or shred chicken, add dressing, pickle relish, and chopped onions. Mix thoroughly and chill for 1 hour (or overnight).

Serving Size: Makes 6, 1-cup servings or 12, 1/2 cup servings, etc.
