Ingredients

    1 15 oz can chickpeas or approx 2 cups cooked, dried beans, drained.
    1 avocado
    juice of 1/2-1 lime or lemon
    1/2 chopped fresh cilantro
    1/3 chopped onion
    1/2 tsp salt

Tips

The avocado replaces mayo in this recipe and the lemon/lime juice thins it out a bit. Try different veggies and herbs to change up the flavor.


Directions

Blend or mash chickpeas and avocado together (depending on how smooth you want the texture). Fold in other ingredients.
