Ingredients

    2 eggs
    1 Tbsp. vanilla extract
    1 cup sugar
    1/4 tsp salt
    1/4 cup apple sauce
    1 cup whole wheat four
    1/2 cup unsweetened cocoa powder
    1 1/2 tsp. ground cinnamon
    1/4 tsp ground cardamom
    2 cups finely grated zucchini
    1 1/2 cups semi-sweet chocolate chips

Tips

Tested, and came out moist and delicious. Cake like, not dense or chewy.


Directions

Pre-heat oven to 350 degrees.
In a med sized bowl combine the eggs, vanilla extract, sugar, salt, and the applesauce.
In a separate bowl, sift the flour cocoa powder add the baking soda cinnamon and cardamom. Mix well.
Add the wet ingredients to the dry ingredients and mix well, fold in zucchini and chocolate chips.
Pour Brownie batter into greased 8 X 8 baking tin.
Bake at 350 degrees for 30-40 minutes, or until toothpick in the center comes out clean.
