Introduction

Ingredients

    Egg, large
    2 Tbsp flaxseed, ground
    1/2 tsp baking powder
    1/2 tsp ground cinnamon
    1 tsp butter

Tips

This makes a "muffin" that is not beautiful, but is a great breakfast addition for those on grain-free diets who are really missing bread.


Directions

Break egg into an ungreased glass custard cup, or microwave-safe mug. Beat with a fork, add dry ingredients and continue to mix with fork. Top with butter. Microwave on high for one minute (you may need a little more time if you have a low-wattage microwave oven.) Remove muffin from cup while hot, slice, and add toppings, if desired.
