Ingredients

    Rice Salad:
    4 Cups- Short Grain Brown Rice (Cooked and Chilled)
    1/2 Cup- Carrots 1/2" Dice (Blanched and Cooled)
    1 Cup- Broccoli Florets (Blanched and Cooled)
    1/4 Cup- Red Peppers 1/2" Dice
    1/4 Cup- Green Peppers 1/2" Dice
    1- Scallion, thinly sliced
    1/2 Cup- Celery, thinly sliced
    1/4 Cup- Red onion, 1/2" Dice
    1/4 Cup- Fresh Cilantro, Chopped
    1/4 Cup- Raisins
    1/3 Cup- Walnut Pieces (Toasted)
    1/3 Cup- Sunflower Seeds (Toasted)

    Dressing:
    1/2 tsp- Fresh Chopped Garlic
    1/2 tsp- Fresh Minced Garlic
    2 tsp- Sesame Tahini
    1/4 tsp- Ground Cinnamon
    4 tsp- Tomato Paste
    1/4 tsp- Black Pepper
    3 Tbsp- Soy Sauce
    4 tsp- Lemon Juice
    1/4 Cup- Olive Oil


Tips

*You can also serve with fat free feta cheese, hummus, or olives


Directions

Rice Salad:
1) Combine all of the ingredients for salad in large bowl

Dressing:
1) Combine all ingredients in a bowl, except olive oil, and whisk together
2) Slowly drizzle in olive oil, whisking continuously
3) Toss rice salad with dressing


Serving Size: makes 8 1-cup servings
