'Wet ingredients'
2oz. 0% Plain Greek Yogurt
.7 cup Pumpkin, canned
1/4 cup Chia Seed
1 cup Milk, 2%
113 grams Applesauce
1 large Egg, fresh
'Dry ingredients
2 cup Flour, white
1 tbsp Cinnamon, ground
1/2 tsp Cloves, ground
3 tsp Baking Powder
1/2 tsp Nutmeg, ground
1 tsp salt
Tips
They are kind of tough and lumpy.
Directions
Preheat oven to 400 F. Grease muffin pan.
Mix the wet ingredients together. If you want sweet muffins add 1/4 cup sugar to the wets. Let it sit a bit while the chia soaks up some liquid. You should have 2 cups of thick, pourable liquid.
In a large bowl, mix the dry ingredients together, getting the spices thoroughly distributed in the flour.
Pour the wet ingredients into the bowl of dry ingredients. Stir until just moistened.
Fill muffin cups 3/4 full.
