Introduction
I came up with this dish using a recipe off pinterest for stuffed sweet potatos as inspiration. The result was a dish everyone has raved over! Vegetarian, healthy, nutrient dense, and DELICIOUS! Ingredients

3 med-large sweet potatos, peeled and cubed (small)
1 med-large yellow onion
2 cups black beans (cooked from dry beans, or 1 can oranic or no salt)
2 cups garbanzo beans (cooked from dry beans,or 1can organic or no salt)
1.5 cups no salt added corn (1 can, or frozen)
Cilantro, Fresh 1/3 cup chopped
2 Tbsp Honey
2tsp - 1 Tbsp crushed red pepper flakes
1 tsp cumin powder
1 tsp black pepper
1 tsp cardamon
1 Tbsp EVOO
Directions
Step 1:
Peel and cube sweet potato into 1/2" cubes.
Step 2: Place in oven safe baking dish.
Step 3:
Toss sweet potato cubes with honey, oil, and seasoning.
Step 4:
Bake potatos at 375 approx 40 minutes, or until tender.
Step 5:
Chop whole onion and cook in skillet with oil until onions are well done.
Step 6:
Combine Onions, Black Beans, Garbanzo Beans, Corn & Cilantro in a sauce pan and heat.
Step 7:
When Potatos are done, combine the bean mixture and potato mixture together.
Step 8:
Serve hot. Optional delicious toppings include greek yogurt (tastes like sour cream), avocado, and salsa.
Step 9:
Enjoy and say MMMMMMMMMMMMMMM
