I struggle to find foods my husband is willing to take in for his lunch. This is the answer. I use any veggies I have on hand and as long as I use sausage, he's fine with it. Ingredients

    1 lb Italian sausage
    1 medium onion, chopped
    1 8 oz box of mushrooms
    1 9" parsnip, grated
    1 7" carrot, grated
    1 8 oz tub ricotta cheese
    12 lg eggs
    1/2 c. colby cheese, shredded
    2 t. salt, divided
    2 t. Italian seasoning, divided
    1 t. garlic powder, divided
    2 T. cornstarch
    2 oz. bacon bits

Tips

Any veggies can be used but they are better sauted.


Directions

Preheat oven to 350F. Grease 9x13 pan. Melt butter in large skillet. Saute onions, mushrooms, parsnips and carrot until nearly tender, about 15 mins. Season with half seasonings. Dump veggies into large mixing bowl. Brown sausage in same pan. Add to bowl. Add spinach to sausage & veggies, toss. Put in bottom of casserole dish. In another bowl, beat eggs, cheeses and remaining seasonings. Add cornstarch. Pour over top of veggies, smoothing with fork. Top with bacon bits. Bake 30 minutes or until set and browned.
