Ingredients

    1/2 Cup warm water
    2 teaspoons instant yeast
    2 tablespoons granulated sugar
    1 1/4 cup brown rice flour
    1/2 cup almond meal
    1/2 cup potato starch
    1/4 cup tapioca starch
    2 1/2 teaspoons xanthan gum
    1 1/4 teaspoon salt
    2 teaspoons apple cider vinegar
    2 tablespoons olive oil
    2 eggs
    2 egg whites
    1/2 cup milk

Tips

Let cool only about ten minutes.
Take out and contrary to most recipies' instructions, I cut my loaf when it's still warm, with one of those old Ginzu knives, in VERY thin slices. I put sets of two slices on a sheet of Press 'N Seal wrap on the counter, covering with another sheet, and rub the wrap "sealed" around each set of slices for freezing. I take out as needed.


Directions

combine warm water, yeast and sugar in glass bowl. stir and let sit 5 minutes. in large bowl combine dry ingredients, mixed well.
in mixer bowl, combine remaining ingredients until well blended, add water and yeast mixture and combine. With mixer on lowest speed, slowly add dry ingredients, until combined, scraping bottom and sides of bowl. Beat on medium speed for four minutes.
Oil and flour (with 1/4 cup of dry ingredients mix, or flour) a glass bread baking dish. Spoon mixture into pan, wet spatula and spread mixture somewhat evenly in pan.
Turn oven on lowest, warm, setting for ten minutes (or when you start beating ingredients). Put pan of dough into oven, uncovered, for 20-40 minutes, letting dough rise till it reaches top of pan. Take out....preheat oven to 350 degrees F. and bake bread dough for 35-45 minutes, till it's golden brown. Dough should sound hollow when tapped, and I use a tall skewer to poke test it. If a tiny bit of white crumb comes out on just the tip, it's done.
