Introduction

Ingredients

    For Omelet:
    2 large eggs
    1 Tbsp heavy whipping cream
    1/8 c sauteed mushrooms

    For Filling:
    1 oz brie
    1/2 c baby spinach leaves
    2 slices deli ham (no sugar added)


Tips

I cook my mushrooms ahead of time to make it easy. They can be stored in the refrigerator, once cooked for up to a week.

To make the omelet easier to flip I swirl the pan around a bit to allow more of the egg to extend to the edge and cook.

This is meant to be induction friendly for an Atkins dieter. You can, of course feel free to add any other veggies you see fit or substitute the cream for milk, cooked mushrooms for raw, etc.


Directions

Crack eggs into a small bowl or coffee cup, add cream, and beat with a fork until well mixed. Add mushrooms and incorporate. Spray a small skillet with nonstick spray and heat to medium heat. Once heated, pour in egg mixture and cook until outside edges are set and egg is mostly cooked through. Flip omelet. Add brie cheese to one half of the omelet, top with ham and spinach. Fold the half that does not have toppings over the other half. Remove to a microwave safe plate. Microwave 30 seconds to melt cheese. Enjoy!
