Ingredients

    11 extra large eggs
    1/2 c milk
    4 cups spinach, sliced
    4 tbsp chopped green onion or fresh chives
    1 tin (213 g) red sockeye salmon, drained
    2 tbsp grated parmesan cheese
    3 oz grated sharp white cheddar cheese
    pepper to taste

Tips

I usually put a pan under this in the oven to avoid drips or spills.


Directions

Preheat oven to 350F.

Spray a large quiche dish with cooking spray.

Spread the spinach evenly over the bottom of the dish, followed by the green onions or chives.

In a large bowl, beat the eggs, milk, parmesan cheese and pepper with a fork, until the eggs are frothy and there are no whole yolks.

Mash the salmon and break up any bones or skin, add to the egg mixture and stir until well blended.

Pour over the spinach in the quiche dish. Sprinkle the grated cheddar on top.

Bake at 350F for approx 40 minutes or until a knife comes out clean.
