Ingredients

    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    Egg, fresh, 1 large
    Egg substitute, liquid (Egg Beaters), 1 cup
    Milk, nonfat (skim milk), 1 cup
    Kraft 2% Shredded Cheddar Cheese, 1 cup
    Spinach, fresh, 2 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    Flour, white, .15 cup
    Salt, .5 tsp
    Pepper, black, .5 tsp
    Nutmeg, ground, .25 tsp
    Extra Virgin Olive Oil, 1 tbsp

Directions

Bake pie crust according to package directions. Remove and cool. Sautee spinach and mushrooms in olive oil, then cool. Mix egg, egg substitute, milk and spices. Put cheese and flour into a ziploc bag to coat, then add to egg mixture, then add cooled spinach and mushrooms. Pour into cooled pie crust and bake at 350 for 40-45 minutes. Let cool 30 minutes.
