Ingredients

    3 lbs Tilapia fillets, about 10
    Flour for dusting fish
    1 Egg
    1/2 C Buttermilk
    1/2 C Flour
    1/2 C Yellow Cornmeal (or Panko Crumbs)
    salt
    Pepper
    1/2 t Baking Soda
    1/2 t Baking Powder
    2 T Old Bay Seasoning
    Canola oil, to cover bottom of large pan

Tips

The cornmeal added a sandy/gritty texture. Next time I will use Panko Crumbs, thus my reference to it. The Old Bay Seasoning added a nice 'bite', but not overpowering. Tilapia is a thin fish, so it doesn't take long to cook.


Directions

Lightly dust fillets with flour. Mix egg with buttermilk in sided dish (pie plate). In another dish combine flour, cornmeal, baking soda, baking powder and Old Bay seasoning. Dip floured fish into egg then flour mixture. Heat oil on med-high in large non-stick pan. Fry 2 minutes per side. Do in several batches.

Serving Size: 2-2 1/2 fillets per serving
