Introduction

Puree veggies hidden inside a delicious meatloaf! Puree veggies hidden inside a delicious meatloaf!
Number of Servings: 6

Ingredients

    1 Cup Kale
    1 Cup Fresh Spinach
    1/2 Cup Alfalfa (Broccoli or other) Sprouts
    1 Cup Tomato Sauce
    1/2 Fresh Avocado (optional)

    1/2 Cup Chopped Onion
    1/2 Cup Chopped Bell Pepper
    1/2 Cup Whole Wheat Bread Crumbs
    3 Large Egg Whites
    2 Lb. Ground Meat (Beef and Turkey used in recipe)

    2 Cup Sliced Carrots
    2 Cup Sliced Potatoes

    Ketchup (optional)
    Bar-B-Que Sauce (optional)

Tips

Use low sodium tomato sauce and Ketsup to help with the sodium content. I didn't have low sodium on hand. Also, you could skip the Avocado as I was just trying to use it up and use Turkey only to make this fewer calories!


Directions

Puree veggies: Kale, Spinach, Sprouts and Avocado. Use Tomato Sauce to get everything moving.

Meat Mixture: Mix Onion, Bell Pepper, Bread Crumbs, Egg Whites and Meat together in a large bowl.

Mix Puree veggies in with meat mixture. Form meat mixture into a loaf and place into slow cooker/crockpot. Place potatoes around meat and place carrots on top of potatoes around meat.

Cook on low for 8 hours or high for 6 hours.
