Ingredients

2 1/2 bricks cream cheese or low fat cream cheese
1/2 cup cream or half and half (cream rec for Atkins)
1/4 cup sour cream
3 eggs
1 tsp vanilla extract
1 tsp grated lemon rind and 1 tsp lemon juice
12 packets of splenda
Optional Toppings:
1/2 cup cream whipped with 2 packets splenda
fruit: Blueberries, raspberries, strawberries or kiwi
Tips
Prep time is only 10 minutes but there is a 2 hour cooling time in refrigerator.
When baking Check doneness at 20 minutes, poke center with a toothpick and if it comes out clean it is done, if not put back in for 5 minutes
Directions
Preheat oven to 325
Cream cream cheese, sour cream, cream, flavorings, eggs, and splenda and mix 1 minute.
Pour into paper cupcake liners in a cup cake pan
Bake 20 -25 minutes test with toothpick in center
Cool 1 -2 hours in refrigerator
Top with blue berries, raspeberries or sliced strawberries, whipped cream, or eat plain
