Introduction

Ingredients

4 Tbsp butter
1/4 cup flour
1 tsp salt
1/2 tsp dry mustard
1/4 tsp pepper
2 cups 2% milk cheddar cheese, shredded
1 cup 2% milk mozzarella cheese, shredded
8 oz 2% milk Velveeta cheese
1 (16oz) box of macaroni (elbow or med. shells)
Paprika (optional)
Tips
Be sure to stir cheese mixture constantly for best results.
If using whole wheat pasta, you may need to include slightly more milk or add some water before baking.
Directions
1. Preheat oven to 375 F
2. Cook Pasta as usual
3. In a large saucepan, melt butter over low heat
4. Stir in flour, salt, mustard, and pepper until smooth; take off heat.
5. Gradually stir in milk until smooth
6. Stir constantly for 10 minutes over heat until mixture thickens; remove from heat
7. Stir in 1 1/2 cups cheddar cheese and all of Velveeta and Mozzarella cheeses.
8. Put cooked macaroni in a greased 13" x 9" casserole dish and pour cheese mixture over; mix well.
9. Sprinkle paprika (optional) and remaining cheddar cheese on top.
10. Bake at 375 F for 20-25 min or until cheese on top is lightly golden.
