Ingredients

    Salt, 1 tsp
    Butter, unsalted, 4 tbsp
    Water, tap, 8-10 cups (8 fl oz)
    Milk, 2%, 2 cups
    Grits, Quaker Quick, 2 1/4 cups

Tips

Makes a lot. Cooked grits freeze well, but recipe can be cut in 1/2. Recipe makes grits that are a bit thicker than normal to use for Shrimp and Grits or other grits-centered meal.


Directions

Boil water. Stir grits into boiling water and then begin blending in 2% milk. Reduce heat and continue stirring until smooth and water is absorbed. Smooth out any lumps that arise. Add more water if grits seem too think. Stir in butter, salt - and pepper to taste. For "NOLA style", stir in plenty of salt-free garlic herb blend. Top each serving with top 1 oz. shredded Parmesan or Italian blend cheese and a dash or two of Crystal or other hot sauce (cheese and hot sauce NOT included in calorie count)
