Ingredients

1 lb ground Chicken
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 stalks of celery, finely diced
1/2 cup of green onion, finely chopped
3/4 cup chopped mushrooms
1/4 teaspoon pepper
1 teaspoon sesame seed
1/4 cup low sodium soy sauce
1 whole lemon to sprinkle on top of salad
6 cups diced Bibb lettuce, or lettuce of your choice
Tips
This recipe can be altered by using less soy sauce. You can also add diced water chestnuts if you like a little more crunch. If you like it spicy you can add a teaspoon of sirachi sauce. Ground turkey can also be used in place of ground chicken.
Directions
Brown the chicken with the minced garlic, minced ginger and finely diced celery.
When the chicken is no longer pink add the chopped green onions and diced mushrooms.
When the moisture is mostly evaporated add the low sodium soy sauce, pepper and sesame seed.
When that is absorbed take off heat to cool for about 10 minutes.
Put the diced lettuce in a bowl and top with the ground chicken mixture. Squeeze some of the lemon on top.

Can't wait to try this. It has all my favorite flavors. I'm thinking that instead of a traditional salad you could use romaine lettuce and make Asian lettuce wraps with this too. Yummy! Thanks for sharing. - 4/2/13

Yes, it can be very versatile and I do like the idea of an Asian wrap. That did cross my mind. Glad you mentioned it : ) It was really good. I LOVE the taste of the lemon in the salad. My husband added it to rice, but I think the chicken portion could be added to couscous or barley too.
