Introduction

This is version of pho noodle soup that is vegan, wheat free and soy free. (i.e, it appears to be gluten free, but you'll have to use your own gluten-free ingredients to be sure.) Ingredients

    6 tsp better than boullion vegetable broth
    1 can sliced water chestnuts
    1 bunch of green onions (1/4 cup)
    10 cups of water
    4 cups of diced carrots

Directions

add vegetables & kelp powder to water & broth, bring to a boil, turn down the heat. Simmer awhile.

Meanwhile on the side, boil rice noodles. Drain. Add a portion of rice noodles to your bowl, add your broth on top. Top with a sprig of fresh basil.

Season to taste. (Perhaps add a few drops of sesame oil and fresh squeezed lime to your bowl of soup.)
