Ingredients

    Canned Chicken, 1 cup home canned chicken
    Canola oil, 1 tbsp
    Onions, raw, 1 small, chopped
    *Snow Peas, fresh, 6 oz.
    Celery, raw, 3 stalk, large (11"-12" long)
    Carrots, raw, 2 medium
    Chicken Broth, 1/2 cup
    Peppers, sweet, red, raw, sliced, 1 cup
    Peanuts, dry-roasted, 1/4 cup
    Rice, white, long-grain, regular, raw, enriched, 1 cup (prepared according to package directions)
    Soy Sauce, 1/4 cup
    Corn Starch, 2 Tbsp cup
    Ginger, ground, 1 tsp
    Garlic, 1 tsp

Tips

The 10 minutes of prep time occurs during the 15 minutes that the rice is cooking, so you can have this on the table in about 15 minutes total.


Directions

Cook rice according to package instructions.
While rice is cooking, chop vegetables.
Heat oil in wok or large skillet.
Stir fry vegetables with garlic. Add soy sauce and broth from chicken. Make slurry of cornstarch and 1/2 cup water. Stir into vegetables. Add chicken and heat through as sauce thickens. Serve chicken and veggies over rice.
