Ingredients

    Multi-Grain Roll, 1 roll w? insides removed
    Portobella Mushroom, 2 slices
    Asparagus, fresh, 2 spear, small (5" long or less)
    Zucchini, 0.25 cup, sliced
    Onions, raw, 1 slice, large (1/4" thick)
    *Peppers, sweet, red, fresh, 0.25 medium (approx 2-3/4" long, 2-1/2"
    Basil, 5 leaves
    Goat Cheese, Semisoft, 2 oz
    *Pesto Sauce, 0.25 cup
    Red Ripe Tomatoes, 2 slice, medium (1/4" thick)

Tips

This is a very filling sandwich and extremely satisfying.


Directions

Grill all vegetables except for the tomato before assembling the sandwich.
Remove the insides of the roll leaving about 1/2" of bread to hold the veggies.
spread 2oz of the goat chees onto the bottom of the roll.
Layer the veggies on top of the cheese, add basil, tomato and spread pesto onto the top of the roll and cover sandwich.
Heat in the oven until cheese is sufficiently warmed and softened. If there is any pesto remaining use to dip the sandwich.
