Introduction

Ingredients

    Almond meal (almond flour) - 1/4 cup
    Flax Seed Meal (ground flax), 1/4 cup
    Egg, fresh, 2 large
    Butter, unsalted, 1 stick
    Baking Powder, .5 tsp
    Erythritol - .5 cup
    Salt, 1 dash
    Trader Joe's Unsweetened Cocoa Powder, 9 tbsp

Tips

Carbs from erythritol are not included here because it does not affect blood sugar. You can use any other low carb sweetener.


Directions

Heat oven to 350 degrees.

Melt butter on the stove and gradually add cocoa powder stirring continually. Once melted, make sure everything is mixed well and turn off the heat.
Add eggs, erythritol and then all the other ingredients and mix very well. Preferably sift the almond meal and flax so there are no lumps. The mixture will be creamy.

Spray oil into a square or round tray (I used round about 8" diam). Pour mixture in and bake for approx 20 mins for soft and chewy brownies. Bake few mins more for more drier brownies. Cut into wedges or squares.
