    1 Medium Yellow Onion
    4 Cloves Garlic
    2 tbsp Coconut Oil
    2 C. Pumpkin, cubed and steamed
    2 C. Broccoli, chopped and steamed
    2 C. Bell Peppers, sliced and steamed

    2 Cans Lite Coconut Milk
    Thai Red Curry Paste (Vegan)
    1 Tbsp. raw sugar
    salt (to taste)


Chop Onion, and mince garlic. Saute in Coconut oil until cooked. Add coconut milk and curry paste, salt, and raw sugar. Simmer until curry paste is blended with other ingredients. Add vegetables and cook until warmed through.

Serve with brown rice.
