Introduction

Baking in the oven gives this bread more room to rise than in the bread machine; so it comes out soft and yummy. If you don't have all the ingredients, don't worry - I have listed substitues for most of them. Ingredients

    3 cups of flour total. At least 1 cup should be unbleached bread flour or all-purpose flour. At least 1/4 cup should be Quinoa flour. the other ~1 1/4 cups can be any flour or blend of flours you like.
    ~1 Tbsp of Infant Formula powder replaces powdered milk found in most recipies, but has more nutrients. (For Vegan, use soy-based)
    ~1 1/2 - 2 Tbsps of sweetener(s) of your choice - Agave nectar, honey, turbinado sugar, dark brown sugar, molassas, and maple syrup all work well.
    ~2 Tbsp of a vegetable-based oil. Coconut oil, canola, Olive Oil, and peanut butter work well.
    ~ 1 - 1 1/2 Tsp Salt (Omitting the sweetner and or the salt makes it taste nasty.)
    ~ warm water, at least room-temperature, but not hot (don't want to kill the yeast)
    ~bread machine yeast or activated yeast.
    For added texture, you can knead in seeds &/or chopped nuts before rising/baking.

Directions

Makes 1 loaf of semi-dense bread that can be sliced very thin or very thick. Approx. 12 servings of 2 slices.
Experiment with the ingredients. Try to never make it exactly the same way twice.
Add all dry ingredients to the bread machine pan. Stir to mix. Then add the rest of the ingredients. Set the machine to Dough. At the end of the bread machine cycle, place dough in a greased/oiled bread pan. While dough rises until it is the same height as the pan, preheat your oven to 385.
Bake for 30-35 minutes until crust is golden-brown and it smells done.
remove the loaf from the pan. When you knock on the bottonm of the bread, it should sound hollow - if not, bake a couple more minutes.
Let cool before cutting or else the internal steam will be relased before it can soften the crust.
