Vegitarian Enchiladas Vegitarian Enchiladas
Number of Servings: 6

Ingredients

    3 cups rosarita refried beans, traditional
    6 oz of soy sation shredded cheese
    6 12" flour (no lard) tortillas
    3 cups crushed tomatoes
    2 cups morning star farms grillers
    2 tbl spoons chile powder
    1 tsp corriander

    1tbs spoon salt (to taste)
    1/2 medium onion

Directions

add all the spices and 1/4 of the onion to the tomato sauce and season to taste.(SALSA) set aside.

In a skillet sautee' the remaining onion and zucchini till tender. Mix the refried beans, grillers, a 1/4 cup of the tomato mixure, onion / zucchini, mix together. Devide evenly into 6 portions on the tortillas. Add 1 cup of the tomato mixture to a 13x9 baking dish. roll the tortillas and place in the baking dish. Pour remaining tomato sauce over enchiladas add the soy cheese to the top evenly, and bake at 400 for 30 minutes or until melted and browned.
