Ingredients

1 box Jumbo pasta shells
1 pound pork italian sausage
1 bottle pasta sauce
1/2 cup chopped raw onion
1 tsp crushed/minced garlic
8 oz cottage cheese
1 egg
4 oz cream cheese
1 tbsp red pepper
5 oz mozzarella cheese
1/2 cup parmesan cheese
1 cup fresh spinach
salt and pepper to taste
3 oz mozzarella cheese

Directions
Preheat oven to 350 degrees:
Bring pasta to rolling boil for a full minute, stir, immediately remove from heat, keep covered and set aside for 18-20 minutes to make pasta al-dente.
While pasta is set aside, brown ground sausage (drain off fat) add onion and garlic.
Place half of sausage mixture in a large mixing bowl, to this add egg, cottage cheese, spinach, 5 oz mozzarella, cream cheese, red pepper, parmesan cheese, salt, and pepper. Mix well.
To sausage mixture in frying pan, add pasta sauce, mix well.
When shells are ready rinse them with cold water, and fill them with cheese mixture, place in a 9x13 pan, pour and spread pasta sauce mixture over shells. Sprinkle remaining 3 oz mozzarella cheese over top of shells, add a little parsley over all, and bake at 350 degrees for about 30 min or until cheese melted and shells heated through. Serve and enjoy!
