Number of Servings: 8

Ingredients

    8-16 oz ham, diced
    1 pkg 16-bean soup mix (without flavor packet)
    1 can diced tomatoes
    1/2 C baby carrots, diced
    1 medium onion, diced
    2 C homemade ham stock

Tips

Add any other veggies that sound good to you! This is great to use up any veggies that are about to go bad!

Goes great with cornbread!


Directions

In large pot, prepare beans as directed.

After beans have been soaked and rinsed, add ham stock and water to cover beans. Bring to boil and simmer for about an hour. (Watch the liquid level!)

Add ham, carrots, onion and canned tomatoes. Add more water if necessary. Simmer for another 30-60 minutes.
