Ingredients

    4 whole chicken breast
    2 lg cans of diced tomato
    2 cups chopped onion
    2 cups chopped green pepper
    2 bay leaf
    1 tsp thyme
    2 tbs chili powder
    1 tsp crushed red pepper flake
    1 tbs garlic powder
    rice or noodles optional for serving

Tips

I use whole chicken breast because I like to save the broth for other recipes, but if your in a hurry you can use canned chicken.
Another great thing about this meal is you can boil your chicken ahead of time so all you have to do is combine everything in the crock pot, let it slow cook all day and supper is ready when you get home


Directions

1) boil chicken till fully cooked, let cool then remove from bone and cut or tear into pieces
2)combine all ingredients let simmer for about an hour

Serving Size: makes about 12 1 cup servings
