Ingredients

1 cup chopped onion
1 medium yellow bell pepper, chopped
1 small jalepeno pepper, seeded and chopped
1.5 cups chopped fresh mushrooms
2 cups black beans either from canned or cooked from dry (I used dry)
1.5 cups quick oats
1 tbsp cajun seasoning (I used Clubhouse brand)
2 tsp garlic powder
1 tsp Clubhouse roasted garlic and pepper seasoning
1 egg plus 1 egg white
salt and pepper to taste
Tips
Optional: Add hot sauce to the patty mixture either before forming into patties or top after cooking. Not accounted for in nutritional information.
Directions
Chop onion, peppers and onion and saute in nonstick pan sprayed with cooking spray
In a blender or food processor, grind up oats to a powder consistency and remove to a bowl.
Place cooked veggies, egg and egg white into blender and grind up coarsely. Add black beans adn seasonings and coarsely grind. Remove to bowl.
Fold in powdered oats.
You can either shape into patties to bake or fry in lightly oiled pan or grill. You may need to make patties and allow to set or even freeze before cooking. Can be eaten in a bun like a burger or as a low fat, high fiber meatless entree on their own.
