Ingredients

Spinach, fresh, 2 cup
Cucumber (with peel), 1 cup slices
Sweet peppers (bell), .25 cup, chopped
Alfalfa sprouts, .25 cup
Feta Cheese, .25 cup, crumbled
*Balsamic Vinegar, 4 tbsp
Olive Oil, 1 1tsp
Herbs de Provence 1/2 tsp total ( oregano , basil, thyme,)
Blueberries, fresh, .30 cup
1/2 packet of Splenda sweetner
Directions
in large bowl or plate put spinach. Top with thinly sliced cucumber slices. Sprinkle on top of that chopped mix colored bell peppers, Sprinkle on blue berries and feta cheese. Sit aside.
Dressing: In small bowl or cup combine Balsamic vinegar, olive oil and 1/2 packet of Spenda sweetner. After combining drizzle over prepared salad on plate.
Serving Size: Makes one full meal serving or two side servings
