Ingredients

    1 teaspoon whole black peppercorns
    2 bay leaves
    2 small potatoes, halved
    3 large carrots, quartered
    1 medium onion, cut into 4 wedges
    1 small head green cabbage, cut into 4 wedges
    Prepared horseradish or mustard, optional

Tips

Feel free to add more potatoes (I was keeping the carbs down - although, they do have a low glycemic load, and this meal is full of fiber) or parsnips...


Directions

Add potatoes, carrots and onion to a large pot and cover with water; bring to a boil. Reduce heat; cover and simmer for 10 minutes.
Add cabbage, cover and simmer for 15-20 minutes or until tender.
Discard bay leaves and peppercorns.
Serve with vegetables and horseradish or mustard if desired.

    Incredible!
    I made this for lunch, adding some vegetarian no-beef bouillon. We crave the vegetables and broth for dipping our bread far more than the meat in a New England Boiled Dinner. We gobbled this up-
    it's delicious! Two thumbs way up!
