Ingredients

    Cook chicken breasts ahead of time
    Sautee onions, almonds, celery, carrots and wild rice in butter or olive oil
    Cook Brown rice as directed
    Add all ingredients in a big pan
    Add the chicken broth
    Add the chicken
    Add Cream of Chicken soup, I used healthy request
    Add Mixed Vegtables
    Bring to a boil
    Turn down and let simmer for about a hour and a half
    Season to taste, I used Mrs. Dash Zesty Italian

Tips

Making this in a big pot allows you to portion out the soup and freeze for quick healthy, hearty soup, whenever you want it.


Directions

Cook Chicken Breasts ahead, allow them to cool while preparing other ingredients
Sautee almonds, onions, celery, wild rice and carrots in either olive oil or butte
Prepare Brown rice as directed
Cut or pull chicken into small pieces
Add all ingredients to big pan
Bring to a boil
Then put on simmer for about 90 minutes
Season to taste

Serving Size: makes 23 one cup portions
